5# redskin potatoes
1/2 # butter
1/4 C heavy cream
1/2 # cream cheese
1/2 # roasted garlic puree
1 C green chiles
1/2 T salt
1/2 T white pepper
1/4 t cayenne pepper
Boil potatoes in salted water until soft. Drain well, do not let cool, potatoes must be whipped hot.
Place butter, cream , chilies, cheese and seasonings in a sauce pan and cook over low heat until butter and cream cheese are melted. Add butter mix and garlic puree to hot potatoes in large mixer. Whip potatoes until all ingredients are incorporated.
